Running:

My goal for the month of May was to get 6-7 hours of sleep each night and drink the recommended amount of water. I did great getting 6-7 hours of sleep but not so much on the water. I feel like the sleep helped with my running and overall feeling better. But I need to start incorporating weights or some type of cross training into my workouts. So my goal for the month of June is to do at least one day a week of cross training.

I did buy myself Garmin Forerunner 225 running watch for my birthday. And I absolutely love it!! If you are in the market for a running watch, I would check out Amazon. I bought mine at a discounted price and it works amazing. My full review is to come in the next week or so but check them out. This watch is amazing!!

 

I absolutely love this bra. If you have a hard time finding running bras, I recommend this- Moving Comfort Women’s Juno Bra! You can find my review here. In the next week, I will have had this Sports Bra for a month and I have no complaints. It is still a little difficult to get on but I am used to it now and it takes half the time it did when I first started using it.

I read a lot of two star books this month. One of my favorite books came out this month was Good Girl. I did the review a while back but you can find it here. Check out the review, I know you will love it. The books is full of strong characters with sassy banter. You can buy it on Amazon for $3.99.  Good Girl (Love Unexpectedly)

My Favorite book this month was My Perfect Mistake. I really do love strong female characters with sassy personalities. And this book has it!! This is definitely a series to keep your eye on. It’s funny, sexy, and at times heartbreaking. I loved the emotions each character went through and the real life problems they had to overcome.

 

 

Draw really disappointed me. In a way this book is about starting over and second chances. And I liked what the author did with Millie’s character. But the book got to the point that I skimmed most of it because I couldn’t stomach what was happening or I was bored. I’m not sure I could recommend this book to anyone.

I Reached 100 Followers!! Again, I want to thank everyone for following my blog. I never thought I would get to this point but I am over the moon that I did!

May is Celiac Awareness Month. I actually wrote two posts about this. The posts were a bit outside of my norm, so I don’t think very many of you looked at them. But if you wanted to know more about what Celiacs is, you can find that here. Or if you want to see the kind of diet I have to stick to, you can read more about that here.

And lets not forget this post- Jurassic Park to my Front Yard. I still can’t believe how bad my front yard actually was. And I am not being dramatic, I have pictures to prove it!!

The Celiac Diet.. ahem Lifestyle

Contrary to what I first thought when getting diagnoses with Celiacs, eating gluten free isn’t as horrible as I originally thought. The gluten free food available now is similar to what I consider normal food, aka wheat infested food. But there are just some things that can not come close to the memories. For example, beer. Oh, man do I miss beer. Deep dish pizza is another but it’s getting to the point that I don’t even remember what pizza is supposed to taste like. Which I guess is a good thing, considering I won’t be able to ever have it again.
CookHere are some of my favorite recipes and typical food I eat on a regular basis. I normally stick closer to a paleo diet. For some reason, my body feels better eating a lower glycemic diet. On the left are a couple of my go to cookbooks. As you can see, my Against all Grain one is falling apart because I use it so much. The little journal looking one on the top right is where I write down family recipes or my absolute favorites that I have turned gluten free. Which really, isn’t that hard once you know what to avoid.

CookDanielle Walker’s Peruvian-Style chicken. If you don’t know who she is, you are missing out! She is an amazing chef with easy to create meals that my kids even eat. This recipe is in her book: Meals Made Simple. The chicken is amazingly tender and the spices are great. This is one of those all encompassing dishes where everything you need is in that pan. I guess if you want fruit, you will have to add that on the side, but you get the idea.

CookThis is another one of my favorite dishes. My husband hates it but I don’t mind. This is an asian rice or mock fried rice dish.

When I add meat to this dish, I like to use an asian marinade. But instead of using soy sauce, I use coconut aminos in the recipe.

 

Ingredients for cauliflower rice:
3 Tbs oil
1 medium onion, finely chopped
2 or more gloves of garlic
a handful of: celery, carrots, broccoli
1/4-1/3 cup chopped nuts
1 large head cauliflower, trimmed and coarsely chopped
salt
coconut aminos or soy sauce

Directions:
Heat oil in a large skillet over medium head. Sauté the onion and garlic for 8-10 minutes, until soft and translucent. Add the celery and sauté for 5 minutes. In a food processor, pulse the cauliflower until it is the texture of rice. Grate or cut the carrot (in the picture I grated them). And cut the broccoli into bite size pieces. Add the cauliflower and carrots to the skillet, cover, and cook for 10 minutes. Uncover and add the broccoli and however much soy sauce you would like. I usually add about 4-5 shakes. I don’t use much, just enough to get a good flavor. Cook for another 5-10 minutes, stirring occasionally. Add the nuts and salt to taste.

Man, are these tasty but they are high in carbs so I wouldn’t pair any other carbs with this dish. These are really simple to make and the kids loved them. Plus the ingredients hardly cost anything, so that is a plus!

For breakfast and lunch I am kind of boring. For the most part I eat the same thing every day. For breakfast, I eat spinach eggs with half an avocado on top. I use two egg whites and two regular eggs, as much spinach as I can shove in there and some salt/pepper sprinkled on top. For lunch I either eat grilled chicken breast or a salmon burger with half an avocado.

For an afternoon pick me up, I will have an iced coffee with a scoop of protein powder mixed in.

CookOne of my favorite things to eat during the spring and summer are salads. I have taken Danielle Walkers California Chicken Wrap- chicken avocado, and bacon- and put it on a salad. I added cucumber and tomatoes. Her herb ranch dressing is to die for. Both of these recipes can be found in her book- Meals made Simple. Her blog is another amazing place to look for great recipes.

 

I buy most of my Almond flour online because of the price. Believe it or not, the texture of your almond flour makes a huge difference.

I don’t have a picture of these but these Cinnamon rolls are amazing!! And I don’t feel horribly guiltily for eating them.

What is Celiac Disease?

Celiac disease is an autoimmune disorder that can occur in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine.  It is estimated to affect 1 in 100 people worldwide.  Two and one-half million Americans are undiagnosed and are at risk for long-term health complications.

CeliacWhen people with celiac disease eat gluten (a protein found in wheat, rye and barley), their body mounts an immune response that attacks the small intestine. These attacks lead to damage on the villi, small fingerlike projections that line the small intestine, that promote nutrient absorption. When the villi get damaged, nutrients cannot be absorbed properly into the body.

Celiac disease is hereditary, meaning that it runs in families. People with a first-degree relative with celiac disease (parent, child, sibling) have a 1 in 10 risk of developing celiac disease.

What are the symptoms of Celiacs Disease?

Right now studies have discovered 300 known symptoms which may occur in the digestive system or other parts of the body. But what is really scary is some people with celiac disease don’t have any symptoms at all.

The most common symptoms are digestive symptoms, which are more common in young kids although some adults do experience these as well. Some examples are: Abdominal pain, chromic diarrhea, vomiting, constipation, pale foul-smelling or fatty stool, etc.

 

In adults, the most common symptoms include: unexplained iron-deficiency anemia, fatigue, bone or joint pain, arthritis, bone loss or osteoporosis, depression or anxiety, tingling numbness in the hands and feet, seizures or migraines, missed menstrual periods, infertility or recurrent miscarriage, canker sores inside the mouth, an itchy skin rash called dermatitis herpetiformis, etc.

Diagnosis and Treatment

There are several blood tests available that screen for celiac disease antibodies. But for this screening to work, you must be eating gluten. Again, you must NOT be on a gluten-free diet.

If test results come back suggesting you might have celiac disease, your physician will recommend a biopsy of your small intestine to confirm the diagnosis.

Celiac disease is a chronic autoimmune disease, which means that you cannot “grow out” of it. The treatment for both celiac disease and gluten sensitivity is lifelong adherence to a strict gluten-free diet

My Story

Growing up, I have always struggled with canker sores. And my stomach has always bothered me. I hated when doctors would push on my stomach because it always hurt. I grew up thinking your stomach was supposed to always hurt. That was my norm, constantly living with mild pain. But it wasn’t until late 2010 and early 2011 that my real symptoms started to show up.

me It started with what I thought was weight gain but really it was my body swelling from everything I was eating. During the week, I normally ate soups and salads for lunch and eggs for breakfast. But on the weekends, I would splurge with pizza, pasta, beer.. you name it. And soon, every weekend I would spend 9+ hours in the bathroom throwing up and in the worst pain of my entire life. Then I would spend a couple more hours in the emergency room because I couldn’t stop vomiting. I would be shaking uncontrollably from the pain. The lightest touch of clothing or sheets would be painful.

Once I had an emergency doctor tell me I was an alcoholic who needed help. But the thing was, I would only have one or two beers and that would be enough to set me off. Finally, at the beginning of 2011, I found an amazing doctor who helped me get diagnosed with Celiacs. I remember my doctor telling me I can to cut out all gluten from my diet. And believe it or not, I cried. I was a carb loving fool at the time and giving up my pasta and breads seemed unfair. When I told my doctor this, he looked at me and pretty much told me to suck it up and I would no longer be a carb person.

Fast forward five years later and some days I still struggle with a gluten free diet. And although my symptoms aren’t bad enough to send me to the ER anymore, they are still bad. When I eat gluten, not only is my body destroyed but so is my mind. And it doesn’t fix itself right away. I have to live with what feels like half of who I am for weeks until my body finally rights itself.

When I eat gluten, I have the digestive symptoms and the horrible pain. That pain usually lasts for about three to five days. But the mind fog is what lasts for weeks. It’s hard to describe but it’s like listening to a conversation but only hearing part of it. Then trying to make sense of what you heard and respond. But you can’t find the words you want and everything is out of range. Your mind is like walking through molasses. You can’t remember anything and you often have to ask the same questions over and over because sometimes you don’t even remember asking them but most of the time you just don’t remember in general.

It’s kind of scary. But what’s really scary is having to take care of my two boys with symptoms. If they are bad enough, I fear I will forget something important and my kids might get hurt. What is also scary is knowing each time I get sick, I might be that much closer to getting colon cancer or developing some other disease.
